The evening opens with something rare — a barrel sample of Freddie's inaugural Chardonnay, Skimming Bird, poured as a welcome glass before the journey begins. Unreleased, unfinished, and offered here first: a glimpse into something still becoming.

Led by former sommelier and winemaker Freddie Rae, the night will unfold as a flowing narrative — part story, part deep dive — weaving together the people, places, and philosophies behind each bottle. Expect insight without pretension, and a sense of discovery that carries from the first glass to the last.

This is a six-course dinner. Enid Grace has composed each dish specifically to meet the wine in the glass — drawing on the flavours of Piemonte itself: white truffles shaved at the table, hand-rolled tajarin, aged Castelmagno, and slow-braised cuts that carry the weight of the hills. These are not merely pairings — they are collaborations, conceived together to create combinations of flavour that neither the food nor the wine could reach alone.
